There are two things in life that I can’t live without. Two things that truly define my existence as a human and get me out of bed in the morning. I’m talking about beer and cheese.
Cheese has been my friend since the first time I tried a slice, and continues to be a staple of my diet. Much to my parent’s dismay, I fell in love with beer at first taste, too. So, in honor of my two favorite food groups, I’ve decided to share an easy recipe that marries the two in an oh-so-delicious way: beer cheese dip!
This recipe uses my favorite 3WM beer, Golden Zoe IPA. You can substitute Zoe with another favorite 3WM beer, but trust me, Zoe has just the right hoppy, yet malty flavor that complements the cheese. This dip is perfect for a party, football tailgate or with your favorite Netflix show by yourself on the couch.
ZOE BEER CHEESE DIP
Serves 4-6 people (but you don’t have to share)
Takes about 15-20 minutes to make
• 2 tbsp unsalted butter
• 3 tbsp all-purpose flour
• 3/4 cup milk, divided
• 1/2 cup Golden Zoe IPA
• 1 tsp Dijon mustard
• 1 tsp garlic salt
• 1/2 tsp cayenne pepper
• 3 1/2 cups shredded Cheddar Jack (or Monterey Jack) cheese (save 1/2 cup for topping)
• 2 oz cream cheese, cubed
• sliced green onions for topping
1.) Melt the butter in a medium saucepan over medium heat. Once it’s nice and melty, whisk in the flour.
2.) Move the saucepan from the heat and whisk in ¼ cup of milk until the mixture is smooth. Then add in another ¼ cup of milk and keep whisking. Now add the last ¼ cup of milk and you guessed it, whisk until smooth.
3.) Stir in the cubes of cream cheese until melted. Take saucepan off heat.
4.) Whisk in the beer, Dijon, garlic salt, and cayenne. Return the saucepan to the heat and stir until the sauce gets thick and starts bubbling, about 3 minutes. Remove from heat.
5.) Now time to dump in 3 cups of cheese a handful at a time. Continue to whisk the cheese as you add it in, to melt it. It may be tempting to taste test, go for it.
6.) Add more spices to your taste. You can even add a couple drops of your favorite hot sauce for an extra kick! Transfer to a heat safe dish and sprinkle the extra ½ cup of cheese and the green onions on top.
7.) Serve immediately with any type of pretzel, sliced baguette, fresh veggies or with a spoon. You can reheat in the microwave or in a crockpot at low heat.
